Pain Patate (sweet patatoe bread)

You'll need..

1- 4 T. softened butter

2- 2 lbs. sweet potatoes, peeled and cut into quarters

3- 1 ripe banana in 1 inch chunks

4- 3 eggs, lightly beaten

5- 1 c. sugar

6- 1/2 c. dark corn syrup

7- ¼ c. seedless raisins (optional)

8- ½ c. milk

9- ½ c. evaporated milk

10- milk of one coconut (1/2 c.)

11- ½ t. vanilla extract

12- ¼ t. ground nutmeg

13- ¼ t. ground cinnamon

Procedures...

1- Preheat oven to 350° and grease an 8x11x2" cake pan.

2- Boil the sweet potatoes in lightly salted water until soft.

3- Drain thoroughly and puree the potatoes with the banana.

4- Beat in the butter and the eggs.

5- Add the rest of the ingredients and blend well.

6- Pour the batter into the prepared pan.

7- Bake in the middle of the oven for l/2 hours, or until a toothpick inserted in the center comes out clean and the top is golden brown.

8- Serve either warm or cold.
